We harvest the\ngrain in June and July, and rotate the fields with other crops like\nsunflowers and fava beans.\u003c\/span\u003e\u003cp style=\"margin-bottom: 0in\"\u003eTo get nutritious, well-flavored pasta,\nyou need to start with the best varieties of hard, durum wheat.\nThat's why we decided to grow our own and to make our pasta only\nfrom this freshly ground wheat.\u003cbr\u003eWe built a custom-designed, small\nfactory right in the middle of the wheat fields so we could control\nthe quality of our wheat and every stage of the pasta production.\u003cbr\u003eWe\nuse bronze dies for the eleven pasta shapes we produce: they give an\nartisanal, textured finish to the pasta that makes it hold its sauces\nbetter.
