Pecorino sardo, also known as fiore sardo, is a firm cheese from the Italian island of Sardinia which is made from sheep's milk. As per D.O.P. standards, the cheese is made with milk sourced from a single flock of a local Sardinian breed. The mixture is poured into moulds that will give the cheese its characteristic shape. After a brief period in brine, the moulds are lightly smoked and left to ripen in cool cellars in central Sardinia. After a total aging of six months, it has a natural, golden-yellow to dark brown rind and a sour, damp smell. Upon slicing, the pate reveals a compact, dense, straw yellow or white color. It is wonderfully rich in flavor, with caramel sweetness, salty tang and a hint of fruit. Excellent served with fruit and fruit preserves, in numerous dishes, or on its own.
