Truffles are one of the rarest and most expensive foods in the world. They have been prized by gourmets for centuries. Like mushrooms, truffles have a system of root-like structures, but unlike mushrooms, they never emerge from the surface. Instead they are formed below the soil close to the tree's root systems, and similar to how Porcini mushrooms live off a nearby tree's nutrients, truffles are the "fruit" of another fungus/tree relationship.
Origin: Italy Weight: 2oz Serving size: about 1oz. for 2 people Uses: Burgundy truffles can be eaten with similar dishes as you would pair with a white truffle – on meats, pasta dishes, eggs, or pâtés and stuffings, for example. Given the milder flavor than its white counterpart, we recommend gently heating the truffle shavings with a little truffle oil for a few seconds before adding to your dish. You can also add other mushrooms to the light sautee to get a rich variety of mushroom flavors in the dish.
