Only one thing could be better than Parmigiano Reggiano -- Red Cow Parmigiano Reggiano. This is made from the milk of the rare Red Cows -- Vacche Rosse (pronounced VAH-kay ROW-say) -- a historic breed of Italian cattle that were pulled back from the brink of extinction. It is higher in protein and butterfat and is aged longer than regular Parmigiano Reggiano. The Red Cow produces a third less of milk than the other breed, but it has a higher performance in the chesse-making process. In Red Cows milk there is a variation of the casein, the essential protein in the process of transforming the milk in cheese, that guarantees a better aptitude for the cheese to a long ageing, with a consequent better digestibility. For that reason the production regulations of Red Cows Parmigiano-Reggiano provide that the product can be sold only after at least 24 months of ageing, compared to the 12 months of the traditional Parmigiano-Reggiano. The result is a cheese that, despite the long ageing, has a sweet, delicate and persistent taste. Moreover, also the organoleptic features are different. Characteristic is the straw yellow colour, the elasticity of the grain, the strong but delicate aroma even after 30 months of ageing.This would be an extraordinary finish to a meal or on a cheese plate with a bit of aged balsamic vinegar drizzled on top.

Unlike any other, so sweet and seemingly mild at first, then the flavor just goes on and on. I could just eat the whole thing straight, but tonight also used it on some pasta Puttanesca, and I think the girls would have approved. I sure liked it anyway.

It is really hard to overstate how fantastic the Red Cow cheese is. The nose is basically like ordinary (well, ordinary top-quality) parmigiano, but the taste is incredibly complex, with a distinct twang almost like goat cheese. It's too good to do almost anything with it other than eat it ravenously, though I think I'll try an extremely simple pasta dish (like pasta, a little butter or very good olive oil, and cheese). This stuff is expensive but seriously, treat yourself. Pick a holiday.

Oh, and if you want to try it with good (GOOD) balsamic vinegar, I suggest seeing what it's like with a tiny piece of cheese. I'm not sure this stuff needs any additional acid or sweetness, but with the right vinegar it might be OK.
