Produced from the milk of a local breed of sheep, as per D.O.P. standards, this cheese is considered the king of the Sardinian pecorinos. Aged anywhere from 60 to 240 days in an environment carefully controlled for temperature and humidity, this pecorino has a strong and pleasantly pungent flavor. With a creamy white or very pale yellow color, according to the time it has been aged, the cheese is quite compact or with slight holes. It is a versatile cheese, wonderful with jams, especially spicy ones.
